The Norwegian aquaculture industry, already the world's largest producer of farmed salmon, has been experimenting with a variety of new fish species.
This week 13 restaurants in Oslo, Stavanger and Tromsø are testing out the response of diners to farmed wolffish, also known as sea catfish, or "flekksteinbit" in Norwegian. Later this year the Norwegian speciality will be tested on restaurant-goers in Germany and France. Each Norwegian restaurant will get 20 kg of fish to serve. Afterward the chefs will be interviewed as part of preparations for extensive marketing of farmed wolffish in 2002.
